I was recently asked if this was possible and it turns out that it isn't after some testing.
It would be awesome if when there's an email address in a request form (either in the form description, question help text, or section header), it links out to a "mailto:" in whatever email program the user has enabled as their computer default (i.e. iCal, Outlook, etc.).
It's awesome that website URLs will automatically hyperlink, but I think we can push this a step further and hyperlink email addresses, too!
Here's an example of the test I ran by adding both an email address and website URL in the description of a request form:

This is especially helpful in some of our external forms that will have contact information in case the requester needs support (i.e. Contact us at [email address]). Right now, it just gets lost in the text as we don't have any rich formatting available to us in request form descriptions.
