One of the main workflows my team uses is Request & Intake Management. That is the primary/only way we take in work is via a request form and going through our Request Queue!

In a product management context, I've been part of a team using a custom item type for product change requests (be they defects, enhancements, or maintenance). Requests are automatically assigned the backlog workflow when added to the product backlog by the intake form (so we avoid creating them directly in the backlog). That tracks them through the assessment, grooming, technical review, and design process. When a backlog item is added to a sprint, it gets the sprint workflow to carry it through implementation, review, testing, any further discussion, and deployment. An automation switches items' workflows as they're added during sprint planning or later.
