Once a project is complete, I would like to download the project and folder structure I created within it to live on my server. Can you please advise on how this can be done?

You can export your data to Excel, please check out this Help Center article on how this works.
As mentioned by Lisa, you can export. I do this all time time. You can also create macros in Excel to achieve your end goal if the format from Wrike is not desired.

Welcome to Wrike Community! You can export a project and its contents (tasks, subtasks, statuses, dates, etc.) to an Excel file; however, this export does not include attachments, comments, or documents. Documents and files attached to tasks or projects can be downloaded separately.
